Banana Muffin with Crumbly Brown Sugar and Cinnamon Tops
(amboi nama glamor, padahal apam pisang je lol)
Hey lovelies. It's the weekend, I thought of doing some baking again!
Thanks to kawaiisweetworld on youtube for this soft, fluffy and moist banana muffin recipe tehehee. I made it using her recipe with a little bit of twist :>
Muffin
A (dry)
- 1 1/2 cups of flour
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/2 teaspoon of cinnamon
B (wet)
- 3 mashed banana
- 3/4 cup of white sugar (I used 1/2 cup)
- 1 large egg (slightly beaten)
- 1/3 cup of unsalted, melted butter
- 1 teaspoon of vanilla extract
Crumbs / Tops
- 1/3 cup of brown sugar
- 2 tablespoons of flour
- A dash of cinnamon
- 1 tablespoon of butter
Direction
1) Preheat oven to 180 degrees Celcius
2) In a large bowl, combine and mix all the dry ingredients (A).
Optional : You can add chocolate chips, or even coco powder about 1/2 of cup to get the chocolate flavor.
3) In another bowl, mix together mashed banana, sugar, egg, and melted butter (B). Mix them until just moistened, do not over mix!
4) Fill batter in the prepared muffin cups about 3/4 full. You should get around 8-12 muffin cups by using this recipe.
5) For the topping, add all the ingredient together and mix it. Don't worry if the mixture is crumble. Then, sprinkle generous amount on top of your muffins. Almond flakes would be good too!
6) Bake in the over 20 - 30 minutes or until a toothpick inserted into the center of the muffin comes out clean.
and you are done!
good luck!
