Chocolate Cupcakes with peanut butter (almost a nutella) frosting

Gal, this is by far the best chocolate cupcakes I have ever eaten. 
You have to try on this recipe. Trust me! This time, I decided to try sallys baking addiction dark chocolate cupcakes, but with my very own version. You can find the original recipe here

As for the topping, I think I just made myself a nutella frosting! haha. orz my frosting tastes like nutella. /pats myself at the back// good job; *angkat bakul masuk sendiri* It is because I added few spoons of crunchy peanut butter - which actually my last minute decision. Lepas tu nak piping susah sebab ada peanut chunks yang besar. LOL. So I'd recommend y'all to use the soft one instead. Kalau nozel yang besar takpa. ;w;

Macam biasa, this recipe makes 12-15 cupcakes depending on paper cake size, and make sure your eggs are in room temperature, nanti batter rosak. dah tak best.

for chocolate cupcakes:
- 1/2 cup (115g) unsalted butter
- 1/2 cup (64 g) cocoa powder
- 3/4 cup (95g) all purpose flour
- 1 packet of coffee mixture (nescafe etc); *tsk, forgot how much in grams*
- 1/2 teaspoon baking soda
- 3/4 teaspoon baking powder 
- 1/4 teaspoon salt
- 2 large eggs; room temperature
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) brown sugar
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) buttermilk

**kat fridge takde buttermilk, so I used 120ml whole milk, and I cut lemon into half and squeezed the juice (instead of using 1 tablespoon), whisk, and leave them for 8 minutes. Always work all the time. Lagipun tak semua kedai jual buttermilk, and it's pretty expensive too.

for nutella (?) frosting:

- 2 cups (200g) icing sugar
- 2/3 cup (80g) cocoa powder
- 6 tablespoons (90g) unsalted butter; room temperature
- 6 tablespoons (95ml) whipping cream / heavy cream
- 3 teaspoons of peanut butter
- 1 teaspoon of vanilla extract 

- Preheat oven to 180 degree C
- Line 12 cupcake on the pan, set aside

1) Melt butter in the microwave for 30 seconds (or more), *give it a stir between each time, and don't burn it. Set aside until it almost cold.

2) In a mixing bowl, sift together flour, cocoa powder, coffee powder, baking soda, baking powder, and salt. (this will be your dry ingredients)

3) In a another bowl, beat in eggs. I used medium speed for about 2 minutes. Add in granulated sugar, brown sugar and vanilla extract and continue beating until they are light and fluffy. (this is your wet ingredients)

4) Add in the cooled butter and whisk just to combine. 

5) Next, add flour mixture in 3 additions, and buttermilk in 2 additions,
(flour mixture -> 1/2 buttermilk -> flour mixture -> the rest of buttermilk -> the rest of flour mixture) , stir in each addition using a spatula, just to combine, do not overmix. And yes, your batter will be very thick, do not worry.

**i'm not a pro, but from what I understand, bila overmix, your flour kind of dah serap habis all the liquid, so batter jadi smooth, which we don't want to. Just use a minimum amount of mixing until you can't see flour in the bowl. there's this whole gluten polymer explanation related to overmixing on the internet, just so you know. lol. *belajar science tetiba*

6) Divide batter evenly into 12 cupcakes liner filling 2/3 full.

7) Bake for 18 minutes or until a toothpick inserted comes out clean. Allows cupcakes to cool completely before frosting.

For frosting, sift together icing sugar and cocoa powder. Set aside. Beat in butter at medium speed until fluffy (2 minutes). Gradually add in icing sugar / cocoa powder alternatively with whipping cream. Mix with medium speed. Add in vanilla extract and peanut butter. Use medium speed to mix before change it to high speed for few seconds. You can add a pinch of salt if the frosting is too sweet. 

and you are done!

Choosing frosting is really up to you when you make cupcakes. You choose what you want, and this chocolate cupcakes are even good to go with chocolate frosting, buttercream or cream cheese frosting. \O/
